Eggplant/ Baigan is roasted on charcoal or open flame for smoky flavour..is prepared with mashed baigan, onion, tomato and spices.
Steps

Wash and pat dry brinja/ baigan l. Apply 1 tbsp oil over it. Keep it on open low flame. Roast on all sides till tender. Let it cool down.

Mashed or pulse grind roasted brinjal in mixer jar. Chopped tomato and onion.

In cooking pan add heat oil. Do tempering of cumin seeds and asafoetida.

Add chopped onion and saute for 1 minutes.

Add chopped tomato and spicy green garlic chilli ginger paste. Saute till tomato soften.

Add tumeric powder red kashmiri chilli powder, dhania jeera and salt. Mix well.

Add mashed brinjal. Mix and cook for 2 minutes.

Serve/ Relish Delicious Hot Baigan Bharta garnish with chopped coriander leaves.
