This recipe is a twist on the classic stuffed eggplant. I first made stuffed eggplant, then added a flavorful gravy. You can also use this method to make okra or bell peppers in gravy.

First, mix together ground coriander, cumin powder, salt, chili powder, turmeric, and 2 tablespoons of yogurt or water. Cut the eggplant and bell peppers, and stuff them with this mixture.

Heat oil in a skillet and cook the stuffed eggplant and bell peppers, turning them until lightly browned and cooked through.

In another skillet, heat oil and add finely chopped onions. When the onions turn light brown, add salt, turmeric, red chili powder, mild chili powder, and tomatoes. Cook to make a gravy. Stir in 2 tablespoons of cream or heavy cream and keep stirring. Once the gravy is ready, add the fried eggplant and bell peppers, mix well, and serve your creamy bell pepper and eggplant with rice or roti.
