An easy set-it-and-forget-it beef stew recipe from the home of the green, green grass.
Cooking Instructions

Heat the olive oil in a pot over medium-high heat. Add the stew meat and cook until seared on all sides. Remove the beef and set aside.

Add the onions and bacon, cooking until the onions are translucent and the bacon is browned.

Stir in the garlic, carrots, and celery. Cook for 2-3 minutes. Sprinkle the flour, salt, and pepper into the pot and stir until the flour is dissolved.

Pour in Guinness and beef broth. Add tomato paste, bay leaves, and thyme. Reduce heat to a simmer and cook for 2 hours, covered.

Remove the lid and continue to simmer for an additional 45 minutes or so, stirring occasionally.

Pour over mashed potatoes and enjoy!
