Beet-carrot rice for kids lunch box

Start by washing the raw rice. Strain and keep aside.
Next in a kadhai, heat oil. Splutter Shahi zeera. Add small chopped onion. Saute. Next add the beetroot, carrot and potato. Add salt, turmeric powder, red chilli powder, chicken masala and garam masala.
Stir mix. Need not cook it much.
Next add in the raw rice.
Mix and saute for 2-3 minutes.
Next add water as needed. Put sugar and lemon juice.
Mix well.
Let it come to a boil. - 2
Transfer everything into a pressure cooker. Put lid and pressure cook at slow to medium heat for 2 whistles.
Switch off and let it release pressure. - 3
As it releases pressure, open the lid but don't disturb the rice.
Let it be as such for 10 minutes.
Fluff up then.
It's ready to serve!! - 4
You can take this rice for your lunch box too... it has subtle flavours.If you like it spicy then, team it up with green chutney and raita and enjoy!!
For kids lunch box, team it up with curd and cucumber.
