1 kg chicken mince.

In a food processor, add all green ingredients and chop well. Add all dry spices, bread slices and chop

Add chicken mince pulse this till smooth and all the spices are mixed through.

Take a small amount of the meatballs mixture and pan- fry it to check for spices.

Using oil on your hands will help you to make smooth kofta.

Then line them up on a tray lined with greaseproof paper and put them in the freezer.

Once they are frozen solid, place them into a ziplock bag or airtight container. This will keep well for 2 months.
Ready frozen kofta/ any time you want you cook kofta curry.
