Juicy and Delicious, this is a no-guilt murabba slow cooked in threaded rock sugar[dhage wali mishri] syrup with various other ingredients steeped in.
I made a small batch and then a bigger one a couple of days back, the colour only gets richer with time & before my camera could no more figure out that shape of ‘Amla’ in its developing dark tone, I decided to capture & click!

Soak berries in water overnight/12hrs. Set it in a steamer once the water comes to boil. Let it cool after 10minutes of steaming. Gooseberries should be firm and half-cooked(Alternatively, you can boil the gooseberries too)

Grind the broken candy pieces of threaded rock sugar into fine powder Use a broad pan.Add 4-5tablespoon water
to the powdered candy and mix well. - 3
Place all the steamed gooseberries in the pan. Now,lightly mix and coat the berries with
the melting powdered sugar candy. - 4
Add few saffron strands(optional) Add a teaspoonful turmeric powder Let it simmer for 40-45 minutes

Berrie’s texture has changed,it has cooked well and the
syrup has started darkening too.At this point :
*add 1tsp black salt
*add 3/4tsp ginger powder
*add 1/2tsp cardamom powder
*add 1/4tsp cinnamon powder
Let it cook until the syrup thickens. - 6
Gooseberry Preserve is ready.
Switch off the flame, let it cool and store
in a clean,dry container.
