Put cubed chicken in a gallon ziplock bag and add taco seasoning packet to it. Mix together and set aside.

Spray a 9 x 13 glass pan with cooking spray and then dump the jar of salsa in and add peppers and onion on top. Then add your rice and chicken broth. Dump the can of green chiles on top and cook uncovered at 375 degrees for 30 minutes.

When that’s done, pull it out, add your chicken mixture and 1/4 cup of fiesta cheese. Mix together really good and cook for an additional 25 minutes.

When that’s done, pull it out, top with a little more cheese and cook for 5-7 minutes.
When it’s done, eat it as it, with tortilla chips or put into a tortilla and eat.
