A basic go to recipe and so versatile that can be mixed with any other vegetables, using tomato sauce etc

Cut aubergine and put into water to take out scum to taste milder
- 2
Put tomatoes into boiling water for a minute to peel the skin, then cut into dice
- 3
Plenty of olive oil on the pan, chopped garlic and chilli
- 4
When the garlic smell comes out, add mince to the pan and cook well.

Add aubergine on the pan, stir until aubergine get softer. Salt and pepper to taste, add tyme. Add red wine, if any leftover, not a must.

Add tomatoes and cook well, check taste. (If using tomato puree or canned tomato sauce, add here.)

Pour cooked pasta and mix well

Serve with parmiggino reggiano
