Wash, peel, and cut the potatoes. Place them in a pot with a little salted water and boil until tender. Check doneness with a fork.

Once cooked, transfer the potatoes to a bowl or salad dish. Season with salt, add the finely chopped shallot (you can also add 1-2 green onions if you like), parsley, dill, sour cream or yogurt, mayonnaise, lemon juice, olive oil, and pepper. Mix well. Optionally, add a little freshly ground pepper on top.
