Heat oil in a kadai. Add mustard seeds, cumin seeds, hing. Once it splutters, add the onions, green chillies, carrot. Saute well. Once it cooked add turmeric powder, red chilli powder, garam masala powder and salt. Add water if needed. Add ginger garlic paste. Saute till the raw smell leaves. Finally add coriander leaves & switch off

To a bowl break down 3 eggs. Whisk it well.
Add besan flour, the masala mixture, and Idli batter. Check salt & add. Mix them well altogether. Now the batter is ready to make Paniyaram. You may adjust the batter consistency as per your wish. - 3
Heat paniyaram/appe pan, add 1/2 tsp of oil in each hole/cavity. Fill each cavity with the egg paniyaram batter. Cook covered on low heat for 3-4 minutes.

Flip it over and cook uncovered on low heat for another 2-3 minutes. Remove from pan and serve immediately with tomato chutney or coconut chutney.
