Wash the offal thoroughly. Pour inside a pot and add sliced onion, thyme, coriander, black pepper, ginger and garlic, seasoning and enough water to cook the offal until soft and tender.

When the water almost dries up, add in little oil and stir fry for some minutes. When it's half fried, add in your grated peppers, sliced onion and curry powder, fry for 2-5mins.

Add little water and taste for seasoning and salt, add if needed. Cover and allow it to simmer for 2mins.

When it's done. Turn off the flame. Serve and enjoy
