Ingredients

45 minutes
6-8 servings
  • 1.5 cups (200 gms)all-purpose flour
  • 3/4th cup powdered sugar
  • 1 pinchsalt to balance the sweetness
  • 1/2 cupsoft butter
  • 1/2 cupolive oil
  • 1 tbspfresh cream
  • 3-4 tbspmilk
  • 1 tspbaking powder
  • 2Kinnow orange juice freshly squeezed and strained
  • 1 tbsporange zest
  • 1 pinchorange food colour (optional)
  • 2 tbspmixed dry fruits chopped
  • 3 tbsporange marmalade for the orange glaze(see recipe)
  • 2 dropsessence of vanilla

Steps

    Preheat oven to 180°C / 350°F. Grease 2 cake pans: one round bundt pan and other heart shaped or any other shape of choice.Line it with butter paper and grease it as well.Grate the outer skin of oranges before juicing.Be sure to zest the orange portion of the peel as the white pith is bitter.After zesting remove the peel.Remove all fibres and seeds from the oranges and blend in a mixer.Strain and set aside.

    In a medium bowl seive the flour adding salt and baking powder.Seive to combine all and set aside.Separate the egg whites from yolk and whisk them separately for a light and fluffy cake.Later add sugar and whisk in a blender.Add olive oil,soft butter and thick cream in the blender and whisk to combine all.Add orange juice as required, zest and 1 tbsp melted marmalade in the flour.Add the whisked egg,sugar,oil, butter,milk, cream and whisk all wet ingredients with the flour till well combined.

    Carefully fold all ingredients in the flour followed by the marmalade.Add vanilla essence. Chop cashewnuts,almonds,walnuts.
    Add raisins and cranberries.Dust with flour and add to the batter. Mix to combine all and do not over stir.

    Divide and pour the batter in 2 prepared 9 inch diameter and 3 inch depth pans.Bake for 40 to 45 minutes at 180°C/350°F.Insert a skewer into the centre.If it comes out clean,the cake is done.It should be well browned on top.

    Leave the cake to cool partially before turning it out of the cake pan.Pierce the top of the cakes at several places with a toothpick. Gently heat the marmalade and spread over the top of the orange cake while still warm.Spread bits of orange zest in the marmalade and set aside to cool.Serve delicious, Orange Cake with Marmalade Glaze as a special treat with a cup of tea.
