To make tava naan, first sift the all-purpose flour and whole wheat flour together. In a separate bowl, mix the yogurt with sugar, baking soda, and salt. Add this yogurt mixture to the flour and combine well. Gradually add warm water and knead to form a soft dough. The dough should be very soft. Rub a little oil on your palms and knead the dough until smooth. Cover the dough and let it rest in a warm place for 3 hours. The dough will rise and be ready for naan.

Once the dough is ready, knead it lightly again. Divide the dough into 6 equal portions. Coat each portion lightly with dry flour and cover with a cloth. Heat a skillet (tava) on the stove. While the skillet is heating, take one portion, coat it with flour, and roll it out. The rolled dough should be slightly thick, like naan. Sprinkle chopped cilantro and black sesame seeds on top, then roll again gently to press them in.

Wet your hand with a little water and spread it evenly over the top side of the rolled dough. Place the dough, water side down, onto the hot skillet over medium heat. The water will help the dough stick to the skillet. Do not try to lift it. When the top of the naan starts to cook slightly, hold the skillet handle, flip the skillet upside down, and cook the naan directly over the flame, moving it around to cook evenly. Once done, turn the skillet upright and use a spatula to remove the naan.

Repeat the process for all the naans. Brush the hot naan with ghee and serve immediately with a curry or your favorite vegetable dish.
