Quicker than opening a can of beans, less expensive, and creamier, fresher tasting, we keep cooked black beans frozen in ice cube trays.

The best black beans are pole grown black beans, they are larger. If you have bought beautiful dried black beans, called turtle black beans, or frijoles negros de tortuga, put a handfull in a sunny spot in your garden, they will grow.

The frozen precooked black bean ice cubes are one ounce, one tablespoon portions, ready in 2 minutes, microwave heated, for tacos, tostadas, burritos, tamales, salads.

For my recipes, I simmer my beans without presoak in a big cast iron pot, three hours, and I add an extra cup of dried black beans to fill an ice cube tray to have handy when needed.

Ingredients

2 minutes
2 people, 14 tablespoons
  • 1 Cupdried black beans (frijoles negros de tortuga)
  • Tspbaking soda
  • 4 cupswater
  • 1/2 tspcoriander
  • 1/2 Tspcumin
  • Piecesalted bacon
  • Equipment: cast iron sauce pan, silicone ice cube tray with lid
  • Cost: 15 cents per cup, makes one pound

Steps

    Bring 4 cups water with a piece of cured salted bacon to boil in a cast iron pot. Add cup of dried black beans, cumin and coriander, simmer 1 hour. Add hot water every half hour to keep beans submerged. Skim off any foam. Taste when soft and creamy, cool. With slotted spoon, fill ice cubes. Top with black bean cooking liquid. Close with top lid. Freeze.
