Rehydrating them with a little added flavour makes them surprisingly delicious and more versatile.

Combine all ingredients in a bowl.

Let soak 5 to 10 minutes.

Strain to separate berries from liquid and ginger.

Save the liquid, it is delicious! Add it to your tea or drink it as is. Add a little honey if it isn't sweet enough for you.

The berries are ready to eat or to add to smoothies, salads, oatmeal, or anything you might put raisins or dried cranberries in.

I'm using this batch in a chickpea and quinoa salad.
