Ricotta Cheese, Walnut, and Tomato Sauce Pasta

I recreated a dish I had in Italy. I think I came close.

Season at the very end with salt and pepper while tasting.
I think walnuts are the best suited to this dish, but you can substitute other nuts. If you don't have any dried tomatoes, use 1 whole ripe tomato and add it at Step 2. For 2 servings. Recipe by Brandy

Ingredients

2 servings
  1. 100 gramsRicotta cheese (or cream cheese if you can't get ricotta)
  2. 30to 50 grams Walnuts - other nuts are OK too
  3. 1/2Onion
  4. 3Dried tomatoes
  5. 1 tspTomato paste (optional)
  6. 20to 30 ml White wine
  7. 30to 40 ml Milk or cream
  8. 1/3to 1/2 teaspoon Salt
  9. 1 dashPepper
  10. 1 tbspOlive oil
  11. 2servings Pasta of your choice
  12. 2to 3 tablespoons Pasta boiling water
  13. 1 dashItalian mixed herbs or basil

Steps

  1. 1

    Soak the dried tomatoes in boiling water until covered. Pulverize the walnuts in a food processor until it's almost a powder.

  2. 2

    Heat olive oil in a pan and saute the finely chopped onions. Add the soaked dried tomatoes along with the soaking water, the powdered walnuts, white wine, and tomato paste. Simmer.

  3. 3

    Boil the pasta. Add the ricotta cheese to the pan, along with the milk or cream and some of the pasta boiling water. Add the cooked pasta and mix well, Season with salt and pepper, scatter in the herbs, and it's done.
