Ingredients

  1. 1 cupinstant brown rice
  2. 1 3/4 cupchicken broth
  3. 1 1/2 cupshredded chicken breast or canned chicken, drained
  4. 1/2 packagesfrozen mixed veggies, thawed
  5. 1 cancondensed cream of celery soup
  6. 1/2 cupmilk
  7. 3/4 cupshredded cheddar cheese, sharp
  8. 1 pinchblack pepper
  9. 1 canbuttermilk biscuits (10 count)

  1. 1

    preheat oven to 375°F

  2. 2

    prepare rice in microwave according to package directions, using broth instead of water(uncle Ben's said cook for 8 minutes)

  3. 3

    I thawed the veggies in the microwave too

  4. 4

    coat inside of casserole dish with nonstick spray (I used 3 qt and had plenty of room so smaller would probably work)

  5. 5

    combine all ingredients except for biscuits in casserole dish and stir to combine

  6. 6

    place biscuits evenly over the top of the chicken and rice mixture

  7. 7

    bake uncovered for 20 to 25 minutes until biscuits are golden brown
