Indian summers main jackfruit nahin khaya to fir kya khaya!! Hehe .. jokes apart, jackfruit is one of those sought after vegetables that I longingly wait for to be available.
We get awesome quality jackfruit in Orissa but It’s difficult to get good quality raw jackfruit here, nonetheless I could manage get a packet and made this delicious dry jackfruit masala.

Boil the cut jackfruit in pressure cooker for 1 whistle. With little oil in pan, fry the jackfruit pieces till light golden at edges. Take it out of the pan.

Heat oil in the pan, add bayleaf, cumin seeds. Once seeds crackle, add ground paste, turmeric. Fry the masala until raw smell goes out. Now add roasted jackfruit, black chana, diced potatoes, coriander powder, chilli powder, salt and mix well, cook for few minutes.

Grind the tomato and add to the curry. Add a cup of water and simmer. Cook till Masala becomes dry in consistency, add garam masala, garnish with chopped coriander leaves.
