Homemade Vegetable Beef Soup

Whenever I have fresh vegetables leftover that I'm not sure what to do with, I try to use them up in a soup! 👏😎👌 Also, I've been incorporating chickpeas into as many different recipes as I can for the last year or so now. Begin by mixing together beef stock, vegetable broth, & water in a large pot over medium heat.

Meanwhile, brown your steak tips in a large frying pan until desired level of wellness is achieved.

Next, drain all canned vegetables & add to the liquids in the pot.

Then, rough chop all your fresh vegetables and add them to the pot as well. Stir ingredients and raise heat to high in order to bring soup to a boil.

Lastly, drain & add beef tips and also add seasonings. Continue to boil all ingredients for 20 mins. stirring occasionally.

Finally, reduce heat to low and simmer soup, stirring occasionally for another 30-45 minutes or until all vegetables are softened. Serve & Enjoy!
