I wanted a quick eggy bread recipe, but with a spicy twist, so added a squeeze of chilli to the egg mix to soak the ciabatta in.

I wanted a quick eggy bread recipe, but with a spicy twist, so added a squeeze of chilli to the egg mix to soak the ciabatta in.

Crack the two eggs into a bowl (or it turns out that a spare Chinese takeaway tub is just the right size), add the 1tsp/squeeze chilli paste and beat to mix together

Add the ciabatta slices (1cm slices work well) to the egg mix to soak, coating all. Do in batches if needed.

Melt the butter in a frying pan and then fry the eggy ciabatta bread for 2mins either side until egg cooked to preference.
