In a large mixing bowl add wheat flour, salt, turmeric, red chili, coriander, jeera powders. Add very hot oil 2-3 tsp or you can add ghee also. Add kasuri methi, crushed carom seeds as well. Now mix all dry ingredients well.

Crumble the dry flour so that the flour holds shape when binded into palms as shown in the picture.This makes puri crispy. Now add water little by little. Knead a stiff dough. Apply 1 tsp oil on the kneaded dough.

Cover the dough keep it aside & let it rest for 15-20 min.
After 20 min. check the dough, knead it. Divide the dough into equal sized balls. - 4
Roll each dough ball with rolling pin. Roll like a thin chapati Or roti. With the help if cookie cutter or glass, cut the roti into poori size.
Make all pooris in the same way. Cover rolled pooris with wet cloth. - 5
Heat oil in a kadhai. Once oil is heated drop poori. Turn poori intermittently. It puffs up nicely. It takes 2-3 min to fry. Transfer fried poori into plate. Masala poori is ready. Serve hot with tomato sauce.

These are puris good for travel.🚂When it is completely cool, pack in boxes for your travel.🚖 It lasts for 2-3 days.
