Lightly Flavored Fried and Simmered Salmon with Plenty of Sake

My family loves salmon, but I had to make a dish that didn't include ginger, as my children don't like it.
Bring the simmering liquid to a full simmer before adding in the salmon.
The dish will be done when the salmon is added and the simmering liquid has developed a syrupy quality. For serving 4. Recipe by HEWA

Steps
- 1
Gently pat the salmon dry with a paper towel. Lightly coat the salmon with katakuriko.
- 2
Heat vegetable oil in a pan. Fry the salmon until it is lightly browned on both sides.
- 3
Combine the ♡ ingredients in a pot. Bring them to a simmer, and add in the fried salmon from Step 2. Simmer for about 10 minutes, and it's done.
- 4
I used a refined cooking sake that has no added salt.
