Tutti frutti cake

This is a pretty simple cake that uses a basic vanilla cake recipe minus the milk. Its moist, fluffy and just like the bakery cake available in Pakistani bakeries.
For those who are wondering what “tutti frutti” is, well it is candid fruit. So you can say this is a candid cake!
This type of cake is very popular in Pakistani and Indian bakeries as it is less costly than the fancy, frosted cakes, and makes an ideal tea time snack.
There is no liquid ingredient like milk, oil or water in this recipe. This is why the batter is thick and not of pouring consistency. If you like to add milk, then follow your simple vanilla pound cake or sponge cake recipe and add the tutti frutti.
Even without milk, the cake turned out to be amazingly moist and delicious. We enjoyed a slice of this pretty speckled cake with a cup of tea. Tea. Surprisingly, there was no leftovers!

Preheat oven 350F. Line a loaf pan with parchment paper and set aside.

Add the tutti frutti and 1 teaspoon flour and mix to coat. Set aside.

In a bowl cream butter and sugar till light and fluffy.

Add the eggs, one at a time, and whisk well.

Sift in the flour, milk powder, corn flour/starch and baking powder. Mix well till creamy.

Add the tutti fruitti, reserving some for top, and mix well.

Add the vanilla and mix to incorporate.

Pour the batter in the prepared pan and sprinkle reserved tutti frutti on top and bake for 45 minutes or till light golden and cake tester comes out clean.

Cool, slice and serve with tea.
