Ingredients

3 to 5 servings
  • 400 gfresh yellow noodles or rice vermicelli noodles
  • 2 pack (280 g)chicken curry D'Heritage
  • 400 mlcoconut milk
  • 2 tbspchili paste (optional)
  • salt and sugar to taste
  • 1/2 cup bean sprouts
  • 1/2 cuplong beans, cut into 2-inch lengths
  • 1/2 cuptofu puffs, cut into bite-sized pieces
  • 2hard-boiled eggs, halved

    Heat the oil in a large pot over medium-high heat, add chili paste and stir-fry for 1-2 minutes until fragrant.

    Add the coconut milk and bring to a boil, then reduce heat and let simmer for 10 minutes.

  3. 3

    Add the bean sprouts, long beans, and tofu puffs to the pot and simmer for another 5 minutes.

  4. 4

    While the broth is simmering, cook the noodles according to the package instructions. Drain and set aside.

  5. 5

    To assemble the curry mee, divide the noodles into serving bowls. Ladle the broth over the noodles, making sure to include a good mix of vegetables and tofu puffs. Top with a halved hard-boiled egg.
