Khichu is a traditional snack made using various types of flours like bajra, rice, nachni etc. Gujarati jowar nu khichu is made with jowar flour which is flavoured with spices, green chillies and Indian spices. Khichus are village breakfast since it is very quick and easy to prepare with few ingredients only and very healthy as well. I grew up eating Jowar khichu (we call it Khato lot) every morning. Almost everyone must be familiar with papdi flour I.e. rice flour khichu…but ever had millet flour sour khichu?? Sorghum is very useful for diabetes and high blood pressure patients as it is rich in fibres. Moreover, Jowar is also useful for weight loss as it is high in fibers. Eating a sorghum flour dish does not make you feel hungry for a long time. People suffering from water retention, swelling are benefited by eating jowar dish. While serving this khichku add sour pickle masala and peanut oil is added so it tastes great.

Heat oil in a pan and add mustard seeds, cumin seeds and asafoetida.

Now add finely chopped green chillies and sweet curry leaves to this.

Then add sour buttermilk and water and stir very well.

Then add baking soda to this and mix everything well and let it boil.

Now add jowar flour to it and mix it well with a wooden spoon.

Now add red chili powder, turmeric powder, ginger chili paste and salt to taste, mix everything well, cover the pan and let the khichu cook on low flame for two minutes. So the Jowar Flour Khichu will be ready to serve.

Now our Jowar Khichu is ready to serve. The taste of khichu is very delicious by sprinkling sour pickle masala, peanut oil and coriander leaves on this khichu.
