Rinse the shrimp and remove the vein along the back. Soak the shrimp briefly in salted water.

Mix sweet potato starch or tempura batter mix with a little water to make a batter, then add the egg and stir until smooth.

Coat the shrimp in the batter. When the oil is hot (test by inserting a chopstick—if it sizzles, it's ready), fry the shrimp until golden brown, then remove and drain.

Stir-fry the pineapple briefly, then remove and mix together with the fried shrimp.

Drizzle with mayonnaise and sprinkle with chocolate sprinkles to finish.
