Poha recipe with its few versions like
KANDA POHA (KANDA MEANS ONIONS 🌰)
BATATA POHA (BATATA MEANS POTATOES 🥔)

Is the staple preparation with flattened rice 🍚 ,herbs and spices.
INDORI POHA -
Very unique variation of this specific dish and famous street food of INDORE MADHYA PRADESH .
It has fennel seeds too.Special toppings are indori sev , spicy boondi ,fresh pomegranate pearls etc.
HOW THIS FLATTENED RICE MADE -
It is made by first preboiling and then
flattening the rice grains. This result in thin , crisp and dry rice flakes that can be easily broken or crumbled.
It is easily available in India 🇮🇳 but outside India 🇮🇳 , it can be brought from an Indian /Asian 🌎 store or buying online.
TO INCREASE THE NUTRITIONAL PROFILE , YOU CAN ALSO PERK UP THIS RECIPE WITH Grated CARROTS 🥕 ,BOILED GREEN PEAS , ROASTED PEANUTS, CASHEWS AND GARNISH WITH A GENEROUS AMOUNT OF Coriander LEAVES 🍃 AND Grated FRESH COCONUT 🥥.
WHEN ADDING POTATOES 🥔 ,YOU CAN EITHER FRY OR STEAM THEM.
I like the flavor of roasted PEANUTS 🥜 in my version. So add them both on this recipe. This healthy and filling dish is easy to digest.

Steps

Soaked chirva in a water 💧 for a minute.
Cut quartered tomatoes 🍅 and chopped medium sized onions 🌰. - 2
Wash curry leaves 🍃 properly.
Take a pan add cooking oil till heated sizzle mustard seeds and add curry leaves
then add chopped onions 🌰 - 3
When onions become light brown add soaked chirva to it.
Add spices red pepper 🌶 powder, turmeric powder, salt 🧂 and chaat masala on it.
Mix it well
Add quartered tomatoes 🍅 and stir it well. - 4
Cook with frying and stirring at low flame 🔥 for 3 minutes.
Take in a serving bowl 🥣
Fry groundnuts and keep it aside.
Use groundnuts for garnishing. - 5
Take it in plate and garnish with groundnuts and drops of lemon 🍋 juice.
