In a wok on low heat add grated onion, mince and a bit of water. Add bay leaf and sprig of thyme. Salt and pepper. Cover until the water evaporates.

Add a bit of oil then add an egg. Incorporate it until you see white bits.

Allow the mince to cool on a plate.

If your feuilles de brick or spring roll pastry sheets are fresh go to step 6.

If your sheets are frozen: remove from packaging, wrap it in a damp cloth and let it thaw for 30mins or an hour. Once done you can put in microwave on low for 30 seconds.

If the sheets are round cut them in half.
Add one tbsp of mince on the corner and fold it like a triangle then fold again like a triangle. Then close it. There are some videos on YouTube if you need a better explanation. - 7
Put oil to cover the bottom of your wok or pan. Fry on both sides until golden brown. Place them on a plate with kitchen roll to drain the excess of oil.

Serve. With a fork pierce a few holes and drizzle lemon juice. The most important step eat it with your hands ! Enjoy.
