Since we had a piece of ciabatta bread that was three days old, I thought of using it by spreading it with gazpacho mixed with Dijon mustard and topping it with slices of bacon grilled in a double-sided grill.

Since we had a piece of ciabatta bread that was three days old, I thought of using it by spreading it with gazpacho mixed with Dijon mustard and topping it with slices of bacon grilled in a double-sided grill.

Slice the leftover ciabatta bread into pieces that aren't too thick.

Mix the gazpacho with 1 tablespoon of Dijon mustard.

Spread the gazpacho and mustard mixture on one side of each bread slice.

Toast the bread in a double-sided grill for about 8 minutes, or until toasted to your liking.

Slice the bacon (you can ask your butcher to do this) and place it on the double-sided grill, seasoning generously with salt. Grill for about 20 minutes, turning every 5 minutes and watching for doneness.

Cut each slice of bread in half, arrange them on a platter, and divide the bacon among the pieces of bread spread with gazpacho and mustard.

Serve on a tray and let everyone take as many pieces as they like.
