Soya Chunks Ridge Gourd Curry

Assemble ingredients, chop / slice ridge gourd and potato.

Take boiled and squeezed Soya Chunks.

Marinade Soya Chunks with 1 tsp Salt + 1 tsp red chilli powder and keep aside for 10 - 15 minutes.

In moderately heated pan add oil and allow to heat, add Nigella seeds and allow to sizzle then add chopped potato and sauté for 2-3 minutes.

Add chopped Ridge Gourd + salt + green chilli + turmeric powder and sauté for 3-4 minutes, cover and cook under medium flame for 3-4 minutes.

Now add the marinade soya chunks and mix well.

Sauté for 3-4 minutes under medium heat. Add water + salt as required.

Cook for 4-5 minutes and gradually water reduces and veggie is cooked.

Simmer and cook for 2-3 minutes and dish is done.

Serve hot hot with hot steamed rice.
