Lemon-Simmered Chicken Tenders

I loved this lemon-simmered chicken in my school lunch as a student. I never missed a day of school when it was on the menu. Since I can't eat school lunches, I recreated this dish.

Be sure to dust off any excess flour. If there's too much it thickens the sauce.

Ingredients

5 servings
  1. 5Chicken tenders
  2. 1Katakuriko
  3. 2 tbsp"A" Soy sauce
  4. 2 tbsp"A" Sugar
  5. 1 tbsp"A" Mirin
  6. 1 tsp"A" Lemon juice
  7. 2 tbsp"A" Water
  8. 1Vegetable oil

Steps

  1. 1

    Coat the chicken tenders with katakuriko. Dust off the excess.

  2. 2

    Add a generous amount of oil to a frying pan and fry.

    Be sure to brown both sides. Once cooked, remove from the pan.

    Add the "A" ingredients to the same frying pan and bring to a gentle boil.

    Return the chicken tenders and heat while basting with the sauce.

    Transfer to a serving plate and it's complete.

    I recommend cutting them into bite-sized pieces. These work great in a bento lunch box! Give it a try.
