Leftover Rice Pudding

Waste not, want not; Leftover Rice can be used in various dishes like fried rice, sweet rice porridge, omelet, savoury porridge, rice balls, steamed rice cake, sweet dessert, to preserve other food or completely dried and then fried to make rice puffs. The list is endless. Rice is a staple in most if not all Asian families especially those whose families are farmers and rice growers, mine's included (reminiscing old days 😊). People use rice in many creative ways. Most recipes are very simple. Most Ingredients are available in most Asian's pantry.
This recipe is no exception. Simple and straightforward. Ingredients can be varied depending on what you like and what you have.

Mix and combine rice, sugar and corn flour in a pot until well-mixed. Next, Add milk and stir again to combine. Then cook over medium heat, making sure to stir frequently. Cook until the rice mixture thickens. This may take 10 - 15mins.

Next, add coconut cream and Vanilla extract (if using). Stir to combine. Continue cooking and stirring frequently over medium heat until it thickens but still pourable. Taste and adjust sweetness to your liking.

Remove from the heat and serve warm. To garnish (OPTIONAL): dried raisins or dried cranberries, a sprinkle of nutmeg or cinnamon powder, toasted coconut or nut flakes, seasonal fruits. Note that, This rice pudding will thicken further as it cools. To serve warm, microwave for few minutes, in 30 seconds intervals - stir and mix. Alternatively, reheat it in a pot/saucepan over low heat, stirring frequently until it's fully heated. Add a splash of milk when heating, if required.
