Wash and thoroughly dry the scallions. Separate the white and green parts, then cut both into small pieces. Reserve a few green tops and slice them thinly for garnish. In a pan, add the vegetable oil and sesame oil. Heat over low, then add the scallion whites and fry briefly.

Add the scallion greens and continue frying until both are deep brown. Remove the scallions from the oil and set aside.

Add the oyster sauce, dark soy sauce, light soy sauce, and sugar to the scallion oil. Simmer until it just starts to bubble, then turn off the heat.

Cook the noodles according to package instructions, then drain. Place the noodles in a bowl, top with the scallion oil, fried scallions, and a small handful of sliced scallion greens. Drizzle with more scallion oil and serve.

Tip: For extra flavor and nutrition, add a spoonful of homemade spicy pickled radish and a soft-boiled egg.
