An easy and quick recipe with an amazing, delicious flavor!

Finely grind the chicken in a food processor, then transfer it to a large mixing bowl to add the rest of the ingredients.

In the food processor, finely chop the onion and bell pepper. Squeeze out the excess liquid very well, then add the mixture to the ground chicken. Set the onion juice aside.

Grate the lamb fat finely and add it to the chicken. This gives the kofta a great flavor, aroma, and tenderness.

Finely chop the parsley and add it to the chicken along with the breadcrumbs, baking powder, and spices to taste (about 1 teaspoon each). Add black pepper and salt as desired.

Mix everything together very well until it forms a dough-like mixture. Let it rest in the refrigerator for 1 hour, or if you're in a hurry, you can use it right away.

Add the tomato paste to the reserved onion juice and mix well.

Wet your hands with the onion juice, then shape the kofta mixture onto skewers (kebab or shish tawook style). You can grill them over charcoal, or remove them from the skewers and arrange them on a baking sheet to bake in the oven. Bake in a preheated oven until cooked through. While baking, brush the kofta with the onion juice mixture.

When done, place a piece of foil on the kofta, add a spoonful of oil and a hot charcoal piece to the foil, then cover to infuse a smoky flavor.

Serve on a platter lined with fresh greens, alongside basmati rice and tahini salad, or with white rice and green salad, or with red sauce pasta as you like. Truly, this is the tastiest and most delicious kofta you'll ever try! 🤤❤️
