Ingredients

  • 1 Cupleft over upama
  • 1 cupWheat flour
  • 2 tspcarom seeds
  • 2 tspred chili flakes
  • 1 tspturmeric powder
  • 2 tspcoriander powder
  • 2 tspcumin powder
  • 2 tspsalt
  • Chopped green coriander
  • Oil for frying

    In a mixing bowl add left over sooji upama. If you have added curry leaves, green chilies while preparing upama, remove them from upama. Now mash upama well with masher.

    Add all spices like turmeric power + chili flakes + coriander powder+ cumin powder+ carom seeds + salt very little + chopped green coriander. Combine all spices well with upama. Knead until smooth. Now add wheat flour into mashed upama.

    Mix wheat flour with the mashed upama. You can add 1-2 tsp water if required. Knead a tight dough. Rest the dough for 10 minutes.

    After 10 minutes, knead the dough again & makes small equal sized dough balls like pedha.

    Take one small dough ball & roll on the plateform & make poori. Dust with flour so that it will not stick to the plateform.

    Once few poooris are rolled, heat oil in a kadhai. Drop poori one by one into hot oil. Fry over medium to high flame. Puri puffs up well.

    Fry poori from both sides until golden brown. Remove fried poori into plate. Flaky masala poori is ready. Serve with tomato sauce or green chutney.
