It's funny, in less than a week, I went from wearing sandals and tank tops—at least by mid-morning—to turning on the heat and searching for my comforter to keep me warm at night.
Yes, it's true, it's officially fall and soon we'll switch to winter time, where even though they officially take away an hour, it really just means living almost in the dark.
But hey! I actually like the darkness, because only in the dark do the stars shine...
Luckily, there are just over sixty days left until Christmas, so I won't get caught off guard: Happy Holidays to everyone!

In a bowl, combine the lemon juice, peeled and chopped apples, and brown sugar. Cover with plastic wrap, poke it 2 or 3 times, and microwave on high for 5 minutes.
Preheat the oven. - 2
Whisk together the olive oil and sugar. Add the eggs and sifted flour with baking powder.

Add the apples to the mixture and pour into a well-greased baking pan.

Make the crumble:
In a bowl, combine the flour, brown sugar, and cinnamon. Add the olive oil and mix with your hands until you get a crumbly texture. Stir in the chopped almonds, mix, and sprinkle over the batter in the pan.
Bake in the preheated oven at 350°F (180°C) for 60 minutes or until a toothpick inserted in the center comes out clean. - 5
