Tuna and Spinach Quiche Made In A Toaster Oven

I wanted to eat a quiche, so I used canned tuna and vegetables I had in stock, and cooked it in the toaster oven in about 15 minutes...it was easy.
There's no need to make a pie crust. Just mix, pour into a mold and bake. An easy recipe from our family.

Cheese is mixed in with the egg and other ingredients, so it's very well flavored and filling.
The tuna will dry out if you stir fry it with the vegetables, so add it later.
I recommend adding mushrooms like shimeji also. For 2 servings. Recipe by Ritorutatsugashira

Ingredients

2 servings
  • 1/2 bunchSpinach
  • 1/2 largeOnion
  • 1/3 largeCarrot
  • 2Eggs
  • 1 canCanned tuna in oil
  • 50 gramsMelting pizza cheese
  • 1 tbspMayonnaise
  • 10 gramsButter or margarine (for sautéing the vegetables)
  • 1Butter or margarine (for buttering the mold)
  • 1Salt, pepper
  • 1Thyme, sage (dried is OK)
  • 1Grated cheese

Steps

  1. 1

    Blanch the spinach, drain and cool in cold water, squeeze out and cut into 3 cm pieces. Parboil the carrot also and cut into 3 cm rectangular slices. Slice the onion thinly.

    Put 10 g of butter and the oil from the tuna can into a frying pan. (Don't put in the tuna itself in yet.)

    Add the onion and carrot to the frying pan and sauté.

    When the onion and carrot are cooked, season with salt, pepper, thyme and sage. Add the spinach and stir fry lightly, then turn off the heat.

    The thyme and sage are optional, but they really go well with tuna so I recommend adding them.

  6. 6

    Cool down the sautéed vegetables. If they are still hot when you add them to the egg, the egg will curdle, so watch out!

    While the vegetables cool down, butter the mold and so on.

    Beat the eggs in a bowl. Add the cooled down vegetables, tuna, cheese and mayonnaise, and mix well.

    Pour the mixture into a buttered mold, and smooth out the surface.

    Sprinkle lots of grated cheese on top if you like. You could put some more melting pizza cheese on top instead.

    Cook for about 15 minutes in a toaster oven and it's done! I used a 350 ml capacity gratin plate this time.
