California Farm Airdrying Thai Hot Peppers

The Thai hot Birds Eye peppers are ripe and will mellow better when dried slowly, taking two months hanging in our kitchen. They stay spicy, but the initial mouthfeel of slowly dried peppers is not as sharp as if they were sundried or ovendried, the outer pepper stays flexible and red instead of fragile and dark, they cook better.
The secret is to coat the fresh peppers with a spray of olive oil, so mold, insects, and moisture do not degrade the peppers when hanging to dry two months.

Ingredients

8 weeks
2 people, 125 peppers
  1. 5single trunk stems of an average of 25 ripe red peppers each
  2. Spray of extra virgin olive oil
  3. Equipment: butchers twine, olive oil spray mister
  4. Cost: $1 per 25 peppers, 4 cents each

Steps

8 weeks
  1. 1

    Tie stems one foot apart, hang peppers one foot away from each other, from the walls, from the ceiling and each other. Spray with hand mister of olive oil. Dry eight weeks at regular room temperature, away from direct sunlight. When ready, snip off dried stalks, store in paper bags, ready to use till next harvest is dried.

I got certified by the University of California Master Gardener Program in 2005. I try to bring out the original flavor of ingredients, then add layers of spices, herbs and flavorings that enhance, not distort the taste.
