
Egusi Soup
My grandma inspired me
Steps

Wash your pepper, tomatoes, cayenne pepper and onions
Then grind till it's smooth. - 2
After grinding the peppers, rinse a pot and pour it inside.
Add little palm oil to it and boil it for some minutes then remove it from the cooker. - 3
Mix your grinded melon seeds with hot water and slice or grate onions to it

Rinse your kettle, pour some water into the kettle and boil it.

When the water is boiled, bring out three separate bowls
In the first bowl put the meat and add hot water and Leave it for some minutes.
The second bowl, put dried crayfish and add hot water, leave it for few minutes
The third bowl, put the dried fish and also add hot water to it, leave it for few minutes
N.b: The crayfish and dried fish must not stay long in the hot water. - 6
After some minutes, remove the meat, crayfish and dried fish and rinse them thoroughly.

Bring out a pot,rinse it and add the needed quantity of water (not much water)
Then put the meat first.
N.b: Do not add the dried fish and crayfish yet
The reason is because they get soft easily than meat. - 8
Place the pot on a cooker, add the ingredients (salt, maggi, garlic powder, tumeric powder Fish head powder) to the meat
Slice onions to it, cover the pot and bring it to boil for some minutes till the meat is soft and tender. - 9
When you see that the meat is tender,add the crayfish and dried fish and let it boil for few minutes.
After some minutes, remove it from the cooker. - 10
Bring another pot(The pot for the soup)
Rinse it, and place it on the cooker, let the water in it get dried.
After that add the needed quantity of palm oil you need, let it steam a little bit then add the melon.Stir it occasionally.
After some minutes when it had thickened, add the grinded pepper to it. - 11
Then, add only the meat and locust beans. let it simmer for some minutes stir it occasionally.
N.b: do not pour the crayfish and dried fish with the stock water yet.
After few minutes, pour the stock water, crayfish and dried fish to it.
Cover the pot and let the soup simmer for some minutes. - 12
After some minutes, remove it from the cooker.
Your egusi Soup is ready to be eaten.
