Pan Roasted Chilli Garlic Baby Potatoes are always a great Indo-Chinese side dish. Made with fresh herbs,it becomes all the more flavourful. Pressure cook baby potatoes upto 2 whistles.Allow pressure to settle and open lid after 5 minutes. The potatoes should be 80% cooked.Cool and peel them. Prick them on all sides with a fork. Coat the potatoes with cornflour, All-Purpose-Flour, salt, black pepper powder and red chilli powder.Drizzle 2 tsp water and mix well.Heat oil in a wok and stir fry the potatoes till golden brown. Set aside.

In the remaining oil add 1 tbsp more oil.Saute the green chillies,minced garlic, grated ginger and spring onion whites.Add the onions and cubed capsicum.Saute for 2 minutes.Add the fried potatoes Make a slurry of cornflour, vinegar,soy, chilli and Hot and Sweet Tomato Chilli Sauce.Pour it over the fried potatoes.Add 1 tsp honey or 1 tsp sugar for the glaze and also for the hot,sweet and sour taste and to balance the heat of chillies.The slurry and sauces should nicely coat the potatoes.

Next add some red pepper flakes and spring onion greens. Toss well to mix all.

Garnish with chopped coriander and serve it as an appetizer at parties or as a side for a special weekend dinner.
