Perfect quick dish for a hot and humid day. This dish comes together quickly. You can enjoy the natural sweetness of Cabbage (I bought the Japanese variant) with it lightly steamed. Served with a refreshing citrusy homemade ponzu sauce. Typically served with sliced pork, I decided to use salmon instead :)

Ingredients

200 gsalmon parts
1/2 headcabbage roughly chopped
1dried shiitake mushroom
1 tbspChinese cooking wine
1 tspminced ginger
White pepper
Homemade Ponzu
1.5 tbspshoyu
1 tbspmirin
2 tbspslemon juice
cubesIce

Mix ponzu sauce mixture (add in ice cubes when serving)

Lay cabbage, dried shiitake dashi (about 1/4 cup). Let steam for 3-4 minutes until dashi starts to boil. Lower heat to low. Add in salmon and cook for about 5-8 minutes.
