I wanted to make an easy chicken dish with Mexican flavors and came up with this one with ingredients I have in the house. It was a big hit with the family!

Ingredients

6 people
  1. 6-8chicken thighs
  2. 10 ozRed enchilada sauce or a jar of salsa
  3. 1 can (16 oz)chickpeas
  4. 1 stick (8 oz)cream cheese
  5. Taco seasoning (to coat the chicken)
  6. 8 ozShredded cheese of your preference
  7. Topping options: sliced avocado, cilantro, diced tomatoes, jalapeno

Cooking Instructions

    Springle taco seasoning all over the chicken thighs, front and back and place them in a baking pan single layer. You can add more/less of the seasoning depending on preference.

    Drain the chickpeas and add them to the chicken. I scatter them all over.

  3. 3

    Dump the enchiladas sauce (or salsa) over the chicken. Spread evenly.

    Slice cream cheese and put them over each chicken thigh.

    Preheat the oven to 385 degrees. Bake the chicken covered with foil for 30 min.

    Check to see if the chicken are cooked thoroughly by cutting one open and don't see any pink flesh. If almost done, sprinkle shredded cheese all over the chicken.

    Return the pan to oven, Boil in low for 5 minutes with the chicken uncovered

  8. 8

    Serve with optional toppings and rice.
