Drain the chickpeas and reserve 1/3 cup of the brine for later. Remove skin from peas by gently rubbing them between your fingers

To get finely mashed garlic and avoid clogging your blender, blend hummus in three batches as follows: Add 1/3 cup of chickpeas to a blender, followed by the rest of the ingredients. Purée the mixture until completely smooth (verify with a spatula or your fingers)

Split the remaining chickpeas in half and add one half to the contents in the blender. Blend until smooth. Add final half of chickpeas and blend

Check for consistency and blend in the reserved brine in small additions at a time until the desired consistency is reached. Adjust seasoning as needed (even more lemon if needed)
