Still experimenting with lower fat and lower carb recipes. Protein is king for myself now so I add more in where I can, hence the greek yogurt. I have a version of this recipe using mayo. The greek yogurt gives the same tender meat result without any added fat and a touch of added protein. Flavor always has to reign supreme. These thighs were crispy, fork tender and just plain delicious. A change in your eating lifestyle doesn't mean boring!

Pork Rind Baked Chicken Thighs

Ingredients

45 minutes
2 people
  1. 4boneless skinless chicken thighs
  2. 4heaping tablespoons of non fat greek yogurt
  3. 4heaping tablespoons of barbeque sauce. I used a sugar free version
  4. Salt and pepper to taste
  5. 1 1/2 tablespoonsgarlic powder
  6. 1/2 cupchicharrones, crushed

Cooking Instructions

45 minutes

    Place chicken on foil lined baking dish. That makes for easy clean up.

    Take Greek yogurt and put one tablespoon of yogurt over each thigh. Repeat with barbecue sauce. Again, to keep calories lower I used a sugar free version. Mine also had habanero flavoring. Gives a nice kick!

    Sprinkle salt, pepper and garlic over thighs. Then evenly spread pork rinds on top.

    Bake at 375 for 40-45 minutes or until thighs are cooked through.
