Bok Choy or Pak Choy is a Chinese Cabbage used in cooking by many. Full of Vitamins, Minerals and Fiber, these dark leafy Greens are a beneficial treat to the body. In this simple yet a flavourful and mouthwatering Fritters, I had made use of simple everyday spices. And since it's a type of Cabbage, it gets done very quickly. To maintain it's crunch, make sure not to cook it longer.
A perfect choice for everyday meals. Be it a Breakfast, Lunch or Dinner, it's absolutely amazing.

Make a semi thick batter using all the ingredients. It's a must. It should not be watery at all. The batter should be thick yet smooth and lumpfree. Use your hands to make the batter. It's always beneficial that way. Clean hands thoroughly before proceeding with it. And always give the batter a standing time of at least 20 minutes.

Use of water depends upon the quality of the flour. So add it accordingly little by little. Therefore it's a bit difficult to say how much of water is enough for the batter. So use it according to the requirement.

Clean and pay dry all the leaves. Set them aside until use. Meanwhile as the stipulated time gets over, heat enough oil for deep frying these fritters on a low. Don't hurry about it. This way the oil gets heated up really well.

Dip each leaf in the prepared batter until well coated on all the sides and deep fry in hot oil on a medium to high heat. Do keep a check on the temperature and fry. If it decreases, allow it to heat up and then proceed with frying. Do not do it on a high heat only. Maintaining the temperature is quite important. Drain on an absorbent paper or a kitchen towel after done. Similarly follow the same for all the fritters as they get fried.

Serve these piping hot with any dip of your choice. Kissan Tomato Ketchup is the best. Enjoy! Yum! Do not forget to sprinkle some Chat Masala before serving.
