I wanted to make a madeleine with a rich flavor, which would be good for gifting.

Let the batter sit for a while before baking. I recommend Earl Gray for the tea. It's also better the next day after baking. If you're using unsalted butter, add a pinch of salt. For 5 madeleines' worth. Recipe by Yukimaru

Ingredients

5 servings
  1. 2 mediumEgg
  2. 80 gramsSugar
  3. 50 gramsHeavy cream (vegetable based also works)
  4. 50 gramsSalted butter
  5. 20 gramsAlmond flour
  6. 1 dashVanilla oil
  7. 3satchets Tea (I recommend Earl Grey)
  8. 80 gramsCake flour
  9. 4 gramsBaking powder

Steps

    Grind the tea in a mill.

    Mix the tea leaves and heavy cream together. Heat in a microwave for about 30 seconds to boil it down.

    Melt butter over hot water or in a microwave.

    First, put the eggs in a bowl, then sugar, heavy cream + tea leaves from Step 2, butter, almond powder and vanilla oil in that order. Mix with a whisk.

    Sift in cake flour, baking powder and mix.

    Mix well to make the mixture thick and smooth.

    Cover with cellophane wrap and let sit for 1 hour in the refrigerator. Then pour the batter into the cups to about 60% full.

    Bake in a 170°C preheated oven for 20 minutes.

    Done.

    By the way, the way to make lemon madeleines.... instead of tea leaves, use 1 tablespoon of lemon juice and prepare 1 lemon.

    Add 1 tablespoon of lemon juice at Step 4 instead of the tea leaves. Peel a lemon and slice into about 5 mm thickness.

    Take the cakes out of the oven once when you have baked for about 5 minutes and place the sliced lemon on top. Then bake for the remainder of the time. The rest would be the same.

    For your reference - Strawberry Madeleines: They are made in the same way as the lemon version. Place a strawberry cut in half, then bake.
