Heat oil in a wide mouthed pan. Keep the flame on a low. Fry oyster mushrooms for about 4-5 minutes on a low to medium-high heat and keep aside. To the same oil, add chopped garlic along with chopped fresh red chillies and little of salt. Saute for a minute or two. Now add lengthwise sliced fried oyster mushrooms.

Saute on a low to medium high heat for the next 10-12 minutes. Keep stirring it every now and then. Halfway through adjust in the rest of the ingredients like salt and pepper. Also add in soy sauce too.

Later as it's done, sprinkle chopped coriander or parsley on top. Give it a light mix. And it's perfectly done. It doesn't require much time. Adjust salt and pepper according to one's own taste. Red Chillies have already been added, so use black pepper as needed.

Serve it piping hot alongside any simple Indian Bread. Enjoy!
