Easy Winter Melon and Shiitake Mushroom Soup

Peel and seed the winter melon, then cut it into chunks and place them in a pot.

Remove the stems from the shiitake mushrooms, cut them into pieces, and add them to the pot.

Peel the ginger, slice it, and add it to the pot.

Add the mushroom bouillon cube (you can use a chicken bouillon cube instead if you prefer).

Add enough water to cover all the ingredients. Bring to a boil, then simmer over medium heat for 30–40 minutes.

Serve hot!
