Garlic Herb Pork Chops:
In a bowl, mix together olive oil, minced garlic, dried thyme, dried rosemary, salt, and pepper.Brush both sides of the thin-cut pork chops with the garlic herb mixture.
Heat a large skillet over medium-high heat.
Place the pork chops in the skillet and cook for about 3-4 minutes per side or until they reach an internal temperature of 145°F (63°C).
Squeeze lemon juice over the pork chops and garnish with fresh parsley before serving.

Garlic Herb Potatoes and Vegetables:
In the same skillet, add a bit more olive oil if needed.Add thinly sliced baby potatoes to the skillet and cook for 5-7 minutes until they start to brown.
Add sliced bell pepper, zucchini, cherry tomatoes, and broccoli florets to the skillet. Toss the vegetables with the potatoes and cook for an additional 5-7 minutes or until the vegetables are tender.
Season with salt and pepper.
