Peel the potatoes, wash them, and cut them into small pieces.

Chop the onions, bell pepper, and garlic cloves (if you’re not sure how to chop garlic, you can add them whole with the skin on).

Turn on the stove, add a little oil to your pot, then add the onions, bell pepper, and garlic. Add a splash of water.

After a minute or two, place the osso buco on top of the vegetables, add tomato puree (use a whole box or half, as you prefer), and add 2 cups of water (about 480 ml). Let it boil for about 30 minutes.

Check occasionally and add a little water as needed to prevent it from drying out.

When the meat is tender, add the potatoes and cook until they are done.
